Mint Almond Biscotti with Berries

Almond biscotti meet juicy berries tossed with lemon, honey, and fresh mint for dipping and spooning.

Ingredients

  • 2 cups flour
  • 3/4 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 4 tablespoons melted butter
  • 1 teaspoon almond extract
  • 3/4 cup sliced almonds
  • 3 cups mixed berries
  • 2 tablespoons honey
  • 1/2 cup chopped fresh mint
  • 1 tablespoon lemon juice

Method

  1. Heat oven to 350 F and line a baking sheet.
  2. Mix flour, sugar, baking powder, and salt, then stir in eggs, butter, almond extract, and almonds.
  3. Shape into two logs and bake 25 minutes.
  4. Slice logs and bake again until dry and golden.
  5. Toss berries with honey, mint, and lemon juice and serve with biscotti.

Fresh Mint Tip

Chop mint into the berry juices after the biscotti cool so the herb tastes freshly cut.
