Ingredients
- 3/4 cup jasmine rice
- 1 can coconut milk
- 2 cups whole milk
- 1/3 cup sugar
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 2 ripe mangoes, diced
- Zest and juice of 1 lime
- 1/3 cup thinly sliced fresh mint
- Toasted sesame seeds

Dessert
Coconut rice pudding gets a bright finish from ripe mango, lime zest, and thin ribbons of mint.
Stack mint leaves and slice them thinly just before serving so the ribbons do not darken.
