Lemon Mint Yogurt Cake with Sumac Berries

Soft lemon yogurt cake gets berries tossed with fresh mint and tangy sumac.

Ingredients

  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 eggs
  • 3/4 cup sugar
  • 1 cup plain yogurt
  • 1/2 cup olive oil
  • Zest and juice of 1 lemon
  • 3 cups mixed berries
  • 1/2 teaspoon sumac
  • 1/2 cup torn fresh mint

Method

  1. Heat oven to 350 F and line a loaf pan.
  2. Whisk flour, baking powder, and salt.
  3. Beat eggs and sugar, then whisk in yogurt, olive oil, lemon zest, and lemon juice.
  4. Fold in dry ingredients and bake until set, 40 to 45 minutes.
  5. Toss berries with sumac and mint, then spoon over slices.

Fresh Mint Tip

Add mint after tossing berries with sumac so the leaves do not bruise under too much mixing.
