Lemon Mint Posset with Blueberries

A simple cream custard set with lemon, chilled, and topped with blueberries tossed in mint.

Ingredients

  • 2 cups heavy cream
  • 2/3 cup sugar
  • Zest of 1 lemon
  • 1/3 cup lemon juice
  • Pinch of salt
  • 2 cups blueberries
  • 2 tablespoons honey
  • 1/3 cup torn fresh mint
  • Shortbread, for serving

Method

  1. Boil cream, sugar, lemon zest, and salt for 3 minutes, stirring often.
  2. Remove from heat and whisk in lemon juice.
  3. Pour into small cups and chill until set, at least 4 hours.
  4. Toss blueberries with honey and mint just before serving.
  5. Spoon berries over possets and serve with shortbread.

Fresh Mint Tip

Keep mint out of the hot cream; the blueberry topping is where it tastes freshest.
