Lemon Mint Madeleines

Buttery shell cakes get a bright brush of honey, lemon, and fresh mint after baking.

Ingredients

  • 2 eggs
  • 1/2 cup sugar
  • 1 teaspoon lemon zest
  • 3/4 cup flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 6 tablespoons melted butter
  • 1/4 cup honey
  • 1 tablespoon lemon juice
  • 1/2 cup fresh mint leaves

Method

  1. Beat eggs, sugar, and lemon zest until thick.
  2. Fold in flour, baking powder, salt, and melted butter, then chill batter 30 minutes.
  3. Spoon into a buttered madeleine pan and bake at 375 F until domed and golden.
  4. Warm honey with lemon juice, remove from heat, and steep mint 8 minutes.
  5. Strain glaze and brush over warm madeleines.

Fresh Mint Tip

Brush the strained mint honey on while the madeleines are warm so it soaks into the ridges.
