Kiwi Mint Fruit Salad with Ginger Syrup

Kiwi, citrus, and berries get a sharp ginger syrup and a generous handful of fresh mint.

Ingredients

  • 6 kiwis, sliced
  • 2 oranges, segmented
  • 2 cups strawberries, halved
  • 1/3 cup sugar
  • 1/3 cup water
  • 1-inch piece fresh ginger, sliced
  • 1 tablespoon lime juice
  • 1/2 cup fresh mint leaves
  • Toasted coconut

Method

  1. Simmer sugar, water, and ginger for 5 minutes, then cool and strain.
  2. Combine kiwi, oranges, and strawberries in a wide bowl.
  3. Stir lime juice into the ginger syrup.
  4. Drizzle fruit with syrup and toss gently.
  5. Fold in mint leaves and finish with toasted coconut.

Add mint after the syrup so the leaves cling to the fruit without bruising.
