Grilled Stone Fruit with Mint Ricotta Cream

Charred stone fruit gets a cool spoonful of ricotta cream folded with lemon and fresh mint.

Ingredients

  • 4 pieces stone fruit, halved
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • Pinch of salt
  • 1 cup ricotta
  • 1/4 cup cream
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1/3 cup chopped fresh mint
  • Toasted almonds

Method

  1. Heat a grill or grill pan to medium-high.
  2. Brush fruit with olive oil, honey, and salt.
  3. Grill cut side down until marked and juicy.
  4. Whip ricotta with cream, lemon zest, lemon juice, and mint.
  5. Serve fruit warm with ricotta cream and almonds.

Chop mint finely for the ricotta so every spoonful carries the herb.
