Grapefruit Mint Pavlova

Crackly meringue, cream, ruby grapefruit, honey, and fresh mint make a bright dessert.

Ingredients

  • 4 egg whites
  • 1 cup sugar
  • 1 teaspoon cornstarch
  • 1 teaspoon white vinegar
  • 1 cup heavy cream
  • 2 grapefruits, segmented
  • 2 tablespoons honey
  • 1/2 cup fresh mint leaves
  • Pinch of salt

Method

  1. Heat oven to 275 F and line a baking sheet.
  2. Beat egg whites and salt, gradually add sugar, and beat until glossy.
  3. Fold in cornstarch and vinegar, shape into a round, and bake until crisp.
  4. Whip cream and spread over the cooled pavlova.
  5. Toss grapefruit with honey and mint, then spoon over the cream.

Fresh Mint Tip

Drain grapefruit segments before adding mint so the pavlova stays crisp longer.
