Date Walnut Mint Baked Apples

Warm apples hold a sticky date-walnut filling brightened with fresh mint and lemon zest.

Ingredients

  • 4 baking apples
  • 1/2 cup chopped dates
  • 1/2 cup walnuts
  • 1/3 cup chopped fresh mint
  • 1 teaspoon lemon zest
  • 1/2 teaspoon cinnamon
  • 2 tablespoons butter
  • 1/2 cup apple cider
  • Greek yogurt, for serving
  • Honey, for serving

Method

  1. Heat oven to 375 F and core the apples, leaving the bottoms intact.
  2. Mix dates, walnuts, mint, lemon zest, cinnamon, and softened butter.
  3. Stuff apples with the date mixture and place in a baking dish.
  4. Pour cider around them and bake until tender, 35 to 40 minutes.
  5. Serve with yogurt, honey, and pan juices.

Fresh Mint Tip

Chop mint just before mixing the filling so it stays fragrant through baking.
