Cranberry Mint Orange Crumble Bars

Buttery crumble bars hold a tart cranberry orange filling, then get a fresh mint sugar finish.

Ingredients

  • 2 cups fresh or frozen cranberries
  • 1/2 cup sugar
  • 1 tablespoon orange juice
  • 1 teaspoon orange zest
  • 1 tablespoon cornstarch
  • 1 1/2 cups flour
  • 1 cup rolled oats
  • 3/4 cup brown sugar
  • 10 tablespoons cold butter
  • 1/2 teaspoon salt
  • 1/4 cup fresh mint leaves

Method

  1. Heat oven to 350 F and line an 8-inch square pan with parchment.
  2. Cook cranberries, sugar, orange juice, orange zest, and cornstarch until glossy and thick.
  3. Rub flour, oats, brown sugar, butter, and salt into a crumbly dough.
  4. Press half the crumble into the pan, spread cranberry filling over it, and scatter remaining crumble on top.
  5. Bake until golden, cool completely, then sprinkle with mint minced into a spoonful of sugar.

Fresh Mint Tip

Add the mint sugar only after the bars cool so the leaves stay green and aromatic.
