Coconut Mint Tapioca Pudding

Soft tapioca pearls simmer in coconut milk, then get a cool finish of lime and fresh mint.

Ingredients

  • 1/2 cup small pearl tapioca
  • 1 can coconut milk
  • 2 cups whole milk
  • 1/3 cup sugar
  • 1/2 teaspoon salt
  • 3/4 cup fresh mint leaves
  • 1 teaspoon vanilla
  • Zest and juice of 1 lime
  • Toasted coconut
  • Small mint leaves, for serving

Method

  1. Soak tapioca in water for 30 minutes, then drain.
  2. Simmer tapioca with coconut milk, whole milk, sugar, and salt until pearls are translucent.
  3. Remove from heat, stir in mint leaves, cover, and steep 8 minutes.
  4. Strain if desired, then stir in vanilla, lime zest, and lime juice.
  5. Serve warm or chilled with toasted coconut and small mint leaves.

Keep the mint steep short; tapioca holds flavor well and can become too herbal quickly.
