Coconut Mint Lime Tres Leches Cups

Small milk-soaked cake cups get coconut, lime, fresh mint, and toasted coconut crunch.

Ingredients

  • 8 small sponge cake rounds
  • 1 cup coconut milk
  • 1/2 cup evaporated milk
  • 1/2 cup sweetened condensed milk
  • 1 cup whipped cream
  • 1 tablespoon lime juice
  • 1 teaspoon lime zest
  • 1/2 cup fresh mint leaves
  • 1/3 cup toasted coconut

Method

  1. Place sponge cake rounds in small cups and poke with a skewer.
  2. Whisk coconut milk, evaporated milk, condensed milk, lime juice, and lime zest.
  3. Pour milk mixture over cakes and chill until absorbed.
  4. Top with whipped cream.
  5. Finish with torn mint and toasted coconut.
