Chocolate Olive Oil Mint Sea Salt Cookies

Deep cocoa cookies use olive oil, fresh mint sugar, and sea salt for a grown-up chocolate-mint finish.

Ingredients

  • 1/2 cup olive oil
  • 1 cup sugar
  • 1/2 cup fresh mint leaves
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped dark chocolate
  • Flaky sea salt

Method

  1. Heat oven to 350 F and line two baking sheets.
  2. Rub mint leaves into sugar until fragrant, then remove large leaf pieces.
  3. Whisk olive oil, mint sugar, egg, and vanilla.
  4. Stir in flour, cocoa, baking soda, salt, and chopped chocolate.
  5. Scoop, bake until set at the edges, and finish warm cookies with flaky salt.

Fresh Mint Tip

Use dry mint leaves for the sugar so the cookie dough stays glossy rather than wet.
