Chocolate Mint Cloud Cake

A cool mint cream layer and dark chocolate crumb make a dessert that feels both rich and fresh.

Ingredients

  • 1 baked chocolate cake layer
  • 2 cups heavy cream
  • 1 cup fresh mint leaves
  • 3 tablespoons sugar
  • 1 teaspoon vanilla
  • Chocolate shavings
  • Fresh mint for garnish

Method

  1. Warm cream until steaming, then remove from heat.
  2. Add mint, cover, and steep for 20 minutes.
  3. Strain and chill the cream until very cold.
  4. Whip cream with sugar and vanilla until soft peaks form.
  5. Spread over cake and finish with chocolate shavings and mint.

Do not boil the mint; gentle heat keeps the flavor soft instead of grassy.
