Cantaloupe Mint Olive Oil Sherbet

Cantaloupe, yogurt, lime, mint, and a thread of olive oil make a creamy chilled dessert.

Ingredients

  • 5 cups cubed ripe cantaloupe
  • 1/2 cup sugar
  • 1/2 cup Greek yogurt
  • 1/2 cup fresh mint leaves
  • 2 tablespoons lime juice
  • 1 teaspoon lime zest
  • 1 tablespoon olive oil
  • Pinch of salt

Method

  1. Blend cantaloupe, sugar, yogurt, mint, lime juice, lime zest, olive oil, and salt.
  2. Chill the base until very cold.
  3. Churn in an ice cream maker until thick.
  4. Freeze until scoopable.
  5. Serve with a few drops of olive oil if desired.

Use a mild olive oil so it supports the mint rather than tasting peppery.
