Blueberry Mint Cornmeal Shortcakes

Tender cornmeal biscuits hold lemony blueberries, whipped cream, and fresh mint for a rustic dessert.

Ingredients

  • 1 cup flour
  • 3/4 cup fine cornmeal
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons cold butter
  • 2/3 cup buttermilk
  • 3 cups blueberries
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • 1/2 cup torn fresh mint
  • Whipped cream

Method

  1. Heat oven to 400 F and line a baking sheet.
  2. Cut butter into flour, cornmeal, sugar, baking powder, and salt.
  3. Stir in buttermilk, pat into rounds, and bake until golden.
  4. Toss blueberries with honey, lemon juice, and mint.
  5. Split shortcakes and fill with berries and whipped cream.

Tear mint into the blueberries after the honey so it clings to the fruit.
