Blackberry Mint Cornmeal Skillet Cake

A golden cornmeal cake bakes with blackberries, then takes honey and fresh mint on top.

Ingredients

  • 1 cup flour
  • 3/4 cup fine cornmeal
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 2/3 cup sugar
  • 1/2 cup buttermilk
  • 1/2 cup melted butter
  • 2 cups blackberries
  • 2 tablespoons honey
  • 1/3 cup fresh mint leaves

Method

  1. Heat oven to 350 F and butter a 10-inch skillet.
  2. Whisk flour, cornmeal, baking powder, and salt.
  3. Whisk eggs, sugar, buttermilk, and melted butter.
  4. Fold in dry ingredients, spread in skillet, and scatter blackberries over top.
