Blackberry Mint Bread Pudding

Soft custard-soaked bread bakes with blackberries and finishes with minty lemon cream.

Ingredients

  • 6 cups cubed brioche
  • 2 cups whole milk
  • 1 cup cream
  • 3 eggs
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 2 cups blackberries
  • 1 cup creme fraiche
  • 1 tablespoon lemon juice
  • 1/3 cup chopped fresh mint

Method

  1. Heat oven to 350 F and butter a baking dish.
  2. Whisk milk, cream, eggs, sugar, vanilla, and salt.
  3. Toss brioche and blackberries in the dish, then pour custard over top.
  4. Rest 15 minutes, then bake until puffed and set, 40 to 45 minutes.
  5. Stir creme fraiche with lemon juice and mint and spoon over servings.

Fresh Mint Tip

Keep the mint in the cool cream sauce so it contrasts with the warm custard.
