Apricot Mint Goat Cheese Cheesecake

A tangy goat cheese cheesecake gets honeyed apricots and fresh mint on top.

Ingredients

  • 1 graham crust
  • 12 ounces cream cheese
  • 4 ounces goat cheese
  • 2/3 cup sugar
  • 2 eggs
  • 1/2 cup sour cream
  • 1 teaspoon vanilla
  • Pinch of salt
  • 8 apricots, sliced
  • 2 tablespoons honey
  • 1/3 cup fresh mint leaves

Method

  1. Heat oven to 325 F.
  2. Beat cream cheese, goat cheese, sugar, and salt until smooth.
  3. Beat in eggs, sour cream, and vanilla.
  4. Pour into crust and bake until just set, then chill completely.
  5. Top with honeyed apricots and fresh mint leaves.

Add mint only after the cheesecake is chilled so the leaves stay fresh against the creamy filling.
