Whipped Ricotta Mint Radish Tartines

Crisp toast spread with whipped ricotta, peppery radishes, lemon, and torn mint.

Ingredients

  • 12 small slices sourdough or baguette
  • 1 cup ricotta
  • 2 tablespoons olive oil
  • 1 lemon, zested and juiced
  • 6 radishes, thinly sliced
  • 1/3 cup torn fresh mint
  • Flaky salt and black pepper

Method

  1. Toast bread until crisp at the edges.
  2. Whip ricotta with olive oil, lemon zest, lemon juice, salt, and pepper.
  3. Spread ricotta thickly over each toast.
  4. Layer radish slices on top.
  5. Finish with torn mint, flaky salt, and a little olive oil.

Fresh Mint Tip

Tear mint by hand for softer edges that sit nicely on the ricotta.
