Tomato Mint Paneer Skewers

Seared paneer and cherry tomato skewers finished with mint cilantro chutney.

Ingredients

  • 12 ounces paneer, cubed
  • 2 cups cherry tomatoes
  • 1 cup fresh mint leaves
  • 1 cup cilantro leaves
  • 1 lime, juiced
  • 1 small green chile
  • 1/2 teaspoon cumin
  • Salt, oil, and skewers

Method

  1. Thread paneer and tomatoes onto skewers.
  2. Sear or grill until paneer is golden and tomatoes blister.
  3. Blend mint, cilantro, lime juice, chile, cumin, salt, and a splash of water into chutney.
  4. Arrange skewers on a platter.
  5. Spoon chutney over the warm skewers.

Fresh Mint Tip

Blend chutney briefly with cold water so the mint stays green and sharp.
