Sweet Potato Rounds with Mint Avocado

Roasted sweet potato coins topped with lime avocado, feta, chile, and mint.

Ingredients

  • 2 medium sweet potatoes, sliced into rounds
  • 1 avocado
  • 1 lime, juiced
  • 1/3 cup chopped fresh mint
  • 1/3 cup crumbled feta
  • Pinch of chile flakes
  • Olive oil, salt, and pepper

Method

  1. Toss sweet potato rounds with olive oil, salt, and pepper.
  2. Roast at 425 F until tender and browned.
  3. Mash avocado with lime juice, mint, salt, and pepper.
  4. Spoon avocado onto the warm rounds.
  5. Top with feta and chile flakes.
