Smoked Trout Mint Potato Bites

Tender baby potatoes topped with smoked trout, lemon creme fraiche, capers, and mint.

Ingredients

  • 18 baby potatoes
  • 4 ounces smoked trout, flaked
  • 1/2 cup creme fraiche or sour cream
  • 1 lemon, zested and juiced
  • 2 tablespoons capers
  • Fresh mint leaves
  • Salt and pepper

Method

  1. Boil potatoes until tender, then halve them.
  2. Stir creme fraiche with lemon zest, lemon juice, salt, and pepper.
  3. Spoon a little creme fraiche onto each potato half.
  4. Top with smoked trout and capers.
  5. Finish each bite with a small mint leaf.

Fresh Mint Tip

Use the smallest mint leaves so the trout remains the main flavor and mint adds lift.
