- 4 Persian cucumbers
- 1 tablespoon rice vinegar
- 1 tablespoon soy sauce
- 2 teaspoons toasted sesame oil
- 1 teaspoon honey
- 1/2 teaspoon chile flakes
- 1/2 cup torn fresh mint
- Toasted sesame seeds

Appetizer
Crackly cucumber pieces dressed with sesame, rice vinegar, chile, and torn mint.
Add mint after chilling so the vinegar does not darken the leaves.
