Roasted Carrot Mint Hummus Crostini

Toasty crostini spread with roasted carrot hummus and finished with mint and seeds.

Ingredients

  • 3 carrots, chopped
  • 1 can chickpeas, drained
  • 2 tablespoons tahini
  • 1 lemon, juiced
  • 1 garlic clove
  • 1 baguette, sliced
  • 1/3 cup fresh mint leaves
  • Toasted sesame or pumpkin seeds
  • Olive oil, salt, and cumin

Method

  1. Roast carrots with olive oil, salt, and cumin until tender.
  2. Blend carrots with chickpeas, tahini, lemon juice, garlic, and enough water to smooth.
  3. Toast baguette slices.
  4. Spread hummus over each toast.
  5. Top with mint leaves, seeds, and olive oil.

Fresh Mint Tip

Use mint as a final topping instead of blending it into the hummus, where the carrot can dull it.
