Lamb Filo Cigars with Mint Yogurt

Flaky filo rolls filled with spiced lamb, pine nuts, and a cool mint yogurt dip.

Ingredients

  • 1/2 pound ground lamb
  • 1 small onion, minced
  • 1 teaspoon cumin
  • 1/4 cup pine nuts
  • 8 sheets filo
  • 4 tablespoons melted butter or olive oil
  • 1 cup yogurt
  • 1/2 cup chopped fresh mint
  • Lemon juice, salt, and pepper

Method

  1. Cook lamb with onion, cumin, salt, and pepper until browned.
  2. Stir in pine nuts and cool the filling.
  3. Cut filo into strips, brush with butter, and roll around spoonfuls of lamb.
  4. Bake at 400 F until golden.
  5. Mix yogurt with mint, lemon juice, and salt for dipping.
