Green Goddess Mint Deviled Eggs

Creamy deviled eggs with parsley, chives, lemon, anchovy, and fresh mint.

Ingredients

  • 6 hard-boiled eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1 teaspoon minced anchovy or capers
  • 2 tablespoons minced parsley
  • 2 tablespoons minced chives
  • 2 tablespoons minced fresh mint
  • Salt and pepper

Method

  1. Halve eggs and remove yolks.
  2. Mash yolks with mayonnaise, Dijon, lemon juice, anchovy or capers, salt, and pepper.
  3. Fold in parsley, chives, and mint.
  4. Spoon or pipe filling into egg whites.
  5. Chill until ready to serve.

Fresh Mint Tip

Mince mint very finely so the filling tastes fresh without leafy strands.
