Artichoke Mint White Bean Dip

Creamy white beans and artichokes blended with lemon, garlic, olive oil, and mint.

Ingredients

  • 1 can cannellini beans, drained
  • 1 cup marinated artichoke hearts, drained
  • 1 garlic clove
  • 1 lemon, juiced
  • 1/4 cup olive oil
  • 1/3 cup chopped fresh mint
  • Salt, pepper, and crackers

Method

  1. Blend beans, artichokes, garlic, lemon juice, olive oil, salt, and pepper until mostly smooth.
  2. Scrape into a bowl.
  3. Fold in chopped mint.
  4. Taste and adjust lemon or salt.
  5. Serve with crackers, crostini, or raw vegetables.

Fold the mint in by hand so the dip stays creamy white with fresh green flecks.
